I want to experiment with Xpress and Xcopy, but don't want to burn all of my DVD-R's. What media type do most people use. I am not sure if I should be using DVD-RW or DVD+RW to experiment with. I DO KNOW once I figure everything out with the programs that I will finally burn onto DVD-R's so I can use them in my home players.

If you just want to experiment, use an RW.
It really doesn't make a difference whether it's a - or a +.
The only real difference would be what your DVD player does better with.

Since my Panasonic HS2 and other machines only play DVD-R and DVD-Ram, I would only be able to use the -RW or +RW in the Sony burner on my computer. Since it is only for experimenting, as long as it burns correctly on the -RW or +RW, I could then burn on the DVD-R and feel safe since it worked on the -RW or +RW. Correct? If it works on -RW or +RW it should work with DVD-R? I was just curious of what media seemed best to use?

There might be some exceptions to your assumptions, but generally if it works fine with a -RW then it should work for -R's
