Ok so in ver 1.3.1 we had Gear, Nero then we had Iso/udf and just udf. Now we have Gear, Nero and I believe it says UDF. Can someone please tell me what the differences are and why they keep changing it.?

The difference is the way that the disk will be burned.
Usually, a professionally pressed DVD is made in ISO/UDF format. This is a format that actually contains two separate formats. (ISO and UDF) Having both formats on the disk helps make it more cross compatible, from Macs, to game consoles, to home DVD players.
Some DVD players will play ISO and not UDF some are the other way around. Usually, on a professionally pressed DVD, the DVD player will lock onto one of these in order to play the disk.
In some situations though, if both are present on a copy of a DVD, it throws off the player. Therefore you may need to choose which one the Home DVD Player is compatible with.
I burn mine on the Nero option using the UDF flag.
